
While Olive Oil is often associated with Western cuisine, it’s actually suitable for all sorts of cooking! Today, lets try out the Chinese style with this Olive Oil Chicken with Cashews recipe — using our Heritage Farm Classic Olive Oil, a budget-friendly yet premium choice for everyday cooking!

Ingredients:
- 2 tbsp of Heritage Farm Classic Olive Oil + 2 tsp for roasting cashews
- 500g chicken thighs, sliced
- 85g unsalted cashew nuts
- 1 yellow bell pepper, diced
- 1 stalk spring onion, diced
- 1/2 onion, diced
- 1 tbsp minced garlic
- 1 chilli, sliced (optional)
Chicken Marinade (marinate for at least 30 mins):
- 1 tbsp light soya sauce
- 1 tsp Happy Family Sesame Oil
- 1 tbsp corn flour
- 1/4 tsp pepper
Seasoning:
- 1 tsp dark soya sauce
- 1 1/2 tbsp oyster sauce
- 1 tbsp Chinese cooking wine
Garnish:
- Diced spring onion
- Sesame seeds

Method:
- Toss cashew nuts with olive oil and roast until lightly browned.
- Heat olive oil in a wok, stir-fry garlic and the white parts of spring onion until fragrant.
- Add marinated chicken and cook until golden brown.
- Add chilli, onion, and bell pepper; stir-fry for 2-3 minutes.
- Toss in cashew nuts and mix well.
- Combine all seasoning ingredients in a bowl, pour into the wok, and stir-fry for another 2 minutes.
- Garnish and serve hot with steamed rice!
