Ingredients:
Spinach – 100g
Large eggs – 4
Button Mushroom, Sliced – 60g
Parmesan Cheese – 30g
Butter – 2 tbsp
Yellow Onion, diced – 1
Extra Virgin Olive Oil – 2 tbsp
Salt – Pinch
Black Pepper – Pinch
Instructions:
- Heat olive oil in a large skillet over med-high heat. Add in the diced yellow onions and stir fry until golden brown and slightly translucent.
- Add in sliced mushrooms and spinach. Season with salt and pepper and cook until spinach is soft.
- Transfer out to a plate and let it cool.
- Crack the eggs in a mixing bowl and beat with 1 tbsp of water and some salt and pepper. Beat until frothy.
- Add the butter into the skillet over med heat. Add the eggs mixture and stir the, around the skillet using a rubber spatula. Cook for about 2 minutes until eggs are slightly cooked.
- Spread the mushroom and spinach mixture and sprinkle the shredded parmesan cheese.
- Once cooked, side the omelette out onto a serving plate and serve with a side of cherry tomatoes or fresh vegetable.
