It’s not a complicated recipe, but it does take a bit of patience. The magic happens when the oxtail slowly simmers, releasing all its flavour into the broth.

  • 1 kg oxtail, cut into chunks
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • A few slices of ginger
  • 1 tomato, diced
  • 2 tbsp XO sauce
  • 1 tbsp tomato paste
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1.5 L beef broth or water
  • 1 tbsp cooking oil
  • Salt and pepper to taste
  • Fresh dill, sliced radish, and cherry tomatoes for garnish
  • Bread or toast on the side
  1. Searing the oxtail in a pot until it’s nicely browned.
  2. Add onion, garlic, and ginger.
  3. Pour XO sauce, tomato paste, soy sauce, and a bit of sugar
  4. Pour in beef broth/water, bring it to a boil, then let it simmer gently for a few hours. The longer it cooks, the better it tastes.
  5. Garnish it with a slice of radish, some dill, and cherry tomatoes and a piece of bread to soak up the rich broth.
