Ingredients:

  • 1-2 eggs
  • 1 piece roti prata
  • 1 table spoon cooking oil
  • Black pepper, to taste
  • Salt, to taste
  • Chopped spring onions, for garnish

Method:

  • Prepare the prata       

Place the roti prata on a chopping board and slice it into 8 equal sections, similar to cutting a pizza. Do not separate the pieces.

  • Shape the nest

Fold each triangular tip outward toward the edge of the prata, creating a round opening in the centre. The folded edges should resemble a small nest.

  • Cook the prata

Heat the frying pan over medium heat and add 1 tablespoon cooking oil. Carefully place the shaped prata into the pan and cook until the bottom becomes golden and crispy.

  • Add the egg

Flip the prata over and crack the egg into the centre hole. Season with salt and black pepper.

  • Finish Cooking

Cook until the egg reaches your preferred doneness. If you prefer the egg more set, you can cover the pan briefly to help it cook through.

  • Serve
    Garnish with chopped spring onions if desired, and serve while hot.
