Spinach – 100g

Large eggs – 4

Button Mushroom, Sliced – 60g

Parmesan Cheese – 30g

Butter – 2 tbsp

Yellow Onion, diced – 1

Extra Virgin Olive Oil – 2 tbsp

Salt – Pinch

Black Pepper – Pinch


  1. Heat olive oil in a large skillet over med-high heat. Add in the diced yellow onions and stir fry until golden brown and slightly translucent.
  2. Add in sliced mushrooms and spinach. Season with salt and pepper and cook until spinach is soft.
  3. Transfer out to a plate and let it cool.
  4. Crack the eggs in a mixing bowl and beat with 1 tbsp of water and some salt and pepper. Beat until frothy.
  5. Add the butter into the skillet over med heat. Add the eggs mixture and stir the, around the skillet using a rubber spatula. Cook for about 2 minutes until eggs are slightly cooked.
  6. Spread the mushroom and spinach mixture and sprinkle the shredded parmesan cheese.
  7. Once cooked, side the omelette out onto a serving plate and serve with a side of cherry tomatoes or fresh vegetable.
