Avocado and eggs are one of the best combinations of food. To put a twist to that avocado and egg toast, cut out the carbohydrates and try baking them together! This recipe goes well with additional ingredient such as Ham, Bacon, Cheese or even diced capsicum, and makes a great breakfast or even a starter to any meal.
- Cut the avocado into half and remove the seed
- Scoop out some avocado and make room for the egg in the middle of the fruit
- Break an egg into the middle of each half avocado. It is normal if there are excessive of whites spill out as long as the yolk is intact.
- Bake in oven at 200 degrees celcius for about 10-15minutes until whites are set and yolk is runny
