• 1 slice whole grain bread, toasted
  • 1/4 of an avocado
  • Cooking oil
  • 1 large egg
  • Salt and black pepper to taste


  1. Toast bread in oven/toaster
  2. Mash the avocado in a small bowl and season with salt and pepper.
  3. Heat a small nonstick skillet over low heat, add a dash of oil and gently crack the egg into the skillet. Cover and cook to your liking.
  4. Place mashed avocado over toast, top with egg, add salt and pepper if desired!
