Maintain the freshness of your strawberries by doing these simple steps:

The key to keeping your strawberries fresh are to kill any spores on the fruit. The white vinegar pH level does that job.

  1. Prepare a salad spinner/ a bowl with strainer, and soak the strawberries for 2mins: fill 1litre of water and 200ml of white vinegar or 5:1 ratio.
  2. Drain the water and rinse the fruit under running water.
  3. Lightly tap the fruit using a cloth or kitchen towel.
  4. Prepare a new kitchen towel and place it on the base of the container
  5. Put the fruits back in the container and place it in the fridge (If you are using an air-tight container, leave the lid slightly open to avoid moisture from building up)

Ingredients

  • 4 cups of strawberries
  • 2 tablespoon of honey
  • 1/3 cup full plain Greek yogurt
  • 1 tablespoon of freshly squeezed lemon juice

Instructions

  1. Wash the strawberries and remove the stems. Slice in half.
  2. Lay the strawberries out evenly over a sheet of parchment paper and place into the freezer overnight or for at least 4-5 hours.
  3. Add the frozen strawberries, honey, greek yogurt, and lemon juice to a food processor.
  4. Process until creamy, about 5 minutes. You may need to scrape down the sides. If you find the strawberries are not fully blending, you can remove half and blend in batches and/or add a little water to help it along.
  5. Test for sweetness and add additional honey as needed.
  6. Serve immediately or transfer to an airtight container and freeze for 2-3 hours for harder consistency.
