Prep time: 30 mins
Chill time: 2.5 hrs (longer is fine!)
Ingredients
🍓 250g strawberries
🥧 12–14 baked tart shells
🍎 1 cup apple juice
🍬 2/3 cup sugar (use all white for a clearer glaze, or mix white and brown)
🌽 2½ tbsp cornstarch
🧂 A pinch of salt
Steps
1️⃣ Bake tart shells according to instructions.
2️⃣ Combine all dry ingredients.
3️⃣ To make the glaze, stir dry ingredients into apple juice. Cook over medium heat, stirring constantly until thick and smooth. Let cool for about 10 minutes.
4️⃣ Halve the strawberries.
5️⃣ Brush a small amount of glaze on the base of each tart.
6️⃣ Arrange strawberries on top.
7️⃣ Spoon remaining glaze gently over the strawberries.
8️⃣ Chill for at least 2.5 hours.
